i did a boneless rib roast and it came out tough..

    It might not be the cut as much as the cooking method. I start the roast out at 400 F (200 C) for 15 minute then I reduce the temp to 350F (180C) for the rest of the cooking. It is done when it reaches 120 F. Then I remove the meat and let it rest for 20 minutes. It is alway tender.

    Any roast will be tender if you cook it slow and long enough. Make sure there is a little bit of fat on the roast and have some water or beef broth in the bottom of the pan.
